During the week we usually have two options for breakfast: cereal or toast. I'm not a morning person, so I keep things simple, and we're usually in a rush so the less I have to do or decide the better! Now that the schools are off and I'm working from home around Allan's shifts I get a bit more time, so here's my recipe for baked oats.


  • 200g porridge oats
  • 4 tbsp sugar
  • 4 medium eggs
  • 450g fat-free yogurt
  • 1/2 teaspoon of vanilla essence
  • 400g fruit (I used frozen mixed berries for this one)

Mix it all together in a casserole dish and stick it in the oven at 180°C or equivalent for approx 45 mins. It should have browned on top and have set enough to take a scoop out of it!
